All in Dinner

Day 15 - Egg Roll in a Bowl

Have a craving for some egg rolls? I know exactly how you feel. But I also want to stick to a clean lifestyle, and eating some deep fried egg rolls would not make me feel well at all. I opted to do a deconstructed egg roll bowl, minus the deep fried wrapper. Did I also mention that it only takes about 15 minutes?

Day 8 - Lime and Garlic White Fish

Have a craving for a grilled fish taco, but don’t wan to deal with the winter temperatures outside? I have a great option for you on this round of Whole 30 - an easy baked white fish, seasoned with lime and paired with some oven roasted vegetables. Feel free to garnish with avocado, pico de gallo and a health squeeze of fresh lime juice. This is a fast cooking fish, so if you are short on time, this is perfect and you can itch that taco Tuesday craving.

Day 6 Whole 30 - Slow Cooker Beef Chili

When a craving hits early in your Whole 30 challenge, you sometimes have to be creative to find a way to satisfy it without straying from the approved foods. I opted to try to make a somewhat sloppy Joe’s inspired beef chili that I wouldn’t have to babysit. I usually come home at lunch time for a little quiet time, so I tossed it in the crock pot and let it do its thing.

Day 5 Whole 30 - Cauliflower Mash

For those of you who want to try lower carb options without skipping flavor, do I have the recipe for you! Potatoes are compliant on Whole 30 now, but if you are wanting to cut down on carbs, this should definitely be in your Whole 30 recipe rotation.

Day 3 Whole 30 - Cube Steak and Oven Roasted Veggies

I am a few days in to my 2019 Whole 30 and the hunger is setting in. I did what any rational person would do on their way home - head to the grocery store while hungry. I safely avoided all temptation and wound up buying some veggies and meat would cook quickly. Come on in and check out how I survived a craving with a completely compliant and nutritious dinner.

Fall Squash and Arugula Salad

It is officially my favorite season - in the rest of the country, cooler temperatures are setting in, leaves are starting to change color, and sweaters are starting to make their appearance. Except here in Arizona, where it is endless summer. While I wait for the air cool down, I decided my cooking did not have to wait - so come on in and enjoy this beautiful autumn salad.

Grilled Salmon and Broccolini

A meal from vacation that was put together on the fly. When the sisters get together, you know it will be a fabulous, fun and clean meal. Our Airbnb in Canada had a fully stocked kitchen, so we absolutely take advantage of it. Come on in for a great summer time recipe.

Cilantro Lime Chicken Burgers

This recipe is courtesy of my fabulous sister! She came to stay for a week with me here in Phoenix and we beat the heat with this stove top burger recipe. Tangy and refreshing, these burgers are a clean eating staple!

Roasted Rainbow Carrots and Chicken in Thyme

I am trying hard to make my meal prep easier on my busy schedule. Working for a non-profit during a busy fundraising season means I am not at home nearly as much as I would like to be. I am often exhausted when I get home, and having one pan meals that goes straight into the oven fits perfectly into my current lifestyle.

Mexican Turkey Burgers

Sometimes dinner is made of what is in your fridge - and I always have ingredients for Mexican dishes in my fridge. This meal was easy, fast and completely Whole 30 approved. I also got my burger fix without going to a fast food restaurant,

Creamy Paleo Spaghetti Squash Casserole

The temperatures are cooling down, which means it is the time of the casserole. This healthy paleo casserole was based off a recipe I saw while browsing recipes online and decided to give this one a shot. If you are in the throws of a Whole 30 challenge, this recipe is comforting and packed with veggies.

Garlic and Sriracha Glazed Salmon

Just a few of my favorite things - garlic, sriracha and fresh salmon. This fast and easy recipe is perfect for those of you needing a pick me up during your Whole 30 challenge or if you just wanted a healthy recipe to add to your busy week.

Moroccan Turkey Meatballs

Want a perfectly balanced meal that has savory and spicy elements? This meal is just what you're looking for, inspired from watching one of my favorite tv shows. Make it paleo and eat these slightly spiced Moroccan meatballs over cauliflower rice, or eat it over some steamed white rice and top with greek yogurt. Try it, I promise you will love this recipe!

Turkey Taco Bowl

Taco Tuesday turned paleo! Turkey taco meat and sweet potato noodles make a perfect paleo taco bowl. Easy to prepare, this meal is a perfect substitute for a taco Tuesday, and it reheats really well the next day.

Chipotle Chicken Stew

I've got a new and easy stew for you to make if you are needing a new meal to add to your meal prep recipes. I love one pot meals, and this stew is great for a paleo lunch or dinner. Full of fresh vegetables, chicken and sweet potato, this stew is guaranteed to keep you full and get you through your day.

Spicy Meatball and Bok Choy Buddha Bowl

A new week means a brand new Buddha bowl idea! Spicy beef meatballs using zucchini as breadcrumbs (who doesn't love sneaking in extra vegetables) with bok choy, baby broccoli and roasted carrots. Just top it off with a spicy tahini dressing and this is wonderful meal for meal prepping on your Whole 30.

Cajun Cauliflower Rice

A twist for my cauliflower rice lovers out there! This spicy Cajun style cauliflower rice is packed with healthy fiber and a ton of protein. With fresh cooked shrimp and sausage, this meal is great for making ahead and vacusealing for a camping trip, or eating for dinner fresh out of the pan.

Basic Buddha Bowl

An introduction into the ever popular buddha bowl. A diverse meal that can easily be changed depending on the combo of meat and vegetables. This is a great meal that will keep you full - this basic recipe is a wonderful building block for a clean eating lifestyle.
