Sweet Potato and Zucchini Hash Browns

Full disclosure here guys, these were supposed to turn out like sweet potato and zucchini latkes based on a recipe I saw on Greatist, but they just did not work for me. I am a perfectionist, so I will attempt this recipe again soon to figure out what I did wrong and make some delicious latkes. One reason I wanted to start this blog was to show people when recipes do and DO NOT work. But, just because I did it wrong it wrong the first time does not mean this recipe did not turn out well. I loves this hash browns recipe because it worked really well with a fried egg on top or by themselves as a side dish. This recipe makes about 4 servings, so you can half all of the ingredients if you do not want to make the full recipe of hash browns. I am a fan of the white sweet potato, but you can use the orange yam counterpart if you want a more colorful meal.

1 medium zucchini, shredded

1 small sweet potato, spiralized then chopped coarsely

3 eggs

4 tablespoons coconut flour

2 teaspoons garlic powder

1 teaspoon cumin

2 tablespoons fresh parsley, finely chopped

3 tablespoons olive oil

2 tablespoons butter or ghee (clarified butter)

salt and pepper to taste

Spiralize a zucchini, and press some of the liquid out using a paper towel. Using a large knife, coarsely chop the noodles so that they are not large noodles only a couple of inches long. Set into a large mixing bowl. Peel the sweet potato, and spiralize into noodles. Chop the sweet potato like you did the zucchini. 

Crack the eggs and blend with a fork. Pour over the chopped noodles in the mixing bowl and blend well with your hands. 

In a bowl, mix the coconut flour and spices with a fork. Once blended, add the coconut flour-spice mixture to the mixing bowel with the zucchini and sweet potato and mix well. 

In a non-stick skillet, heat the butter and olive oil over medium heat. Add about 1/2 a cup of the mixture and flatten with a spatula. Cook for 5-7 minutes, or until the bottom is golden, then flip and cook about 4-5 minutes. Repeat this process until the whole mixture has been cooked.  Allow to cool for a moment and enjoy!
