Basic Oven Roasted Vegetables
Roasting vegetables has become a regular occurrence in my house. Simple and fast, this recipe is easily adapted to what ever vegetable is in season. Olive oil and some Italian seasoning makes any vegetable perfect with some chicken or steak. With the holidays coming up, I am honing my roasting skills.
3-4 red potatoes, cubed
6 asparagus spears, trimmed
2 large carrots, peeled and cubed
1 tablespoon olive oil
1-2 teaspoons Italian seasoning
Pre-heat the oven to 375 Fahrenheit. Prep the vegetables and place into a large mixing bowl. Coat in the olive oil evenly.
Lay out the vegetables on a baking sheet lined with parchment paper. Sprinkle the seasoning over the vegetables. Place the baking sheet into the oven and bake for 25 minutes. Once cooked, remove from the oven and allow to cool and enjoy.
