Toasted Pepitas

Often times, people who do clean eating find that the hardest part of their day is when they are hungry between lunch and dinner and are craving a snack. Set yourself up for success and come prepared with healthy snacks. I always keep a mason jar full of mixed nuts in my desk at work, but sometimes I want to change it up with other flavors. You can find raw pepitas in any health food store in those large bins of raw nuts, seeds, etc. This toasted pepita snack takes 5 minutes to make and will store for a week or so in an air tight tupperware. Pepitas are also a great addition to any salad or on top of a fresh cut avocado. 

1-2 cups raw pepitas (shelled pumpkin seeds)

1 tsp olive oil

Sea salt to taste

CHILI CUMIN VERSION: 

1 cup raw pepitas

1 teaspoon olive oil

1/4 teaspoon cumin

1/2 teaspoon chili powder

1/4 teaspoon sea salt

Heat a non-stick pan to medium high, add the olive oil to the pan and bring to heat. Now add the pepitas to the pan and toast them until they begin to turn brown (about 4-5 minutes).  Remove from the heat and salt to taste. Or, if you are going to try the chili cumin mix, put onto the pepitas while still in the pan once they are toasted.

1 entire cup of raw pepitas has 12g of fiber and only 22g of carbs. Snacks that are high in fiber keep you feeling full and satisfied.
