Snack Time: Avocado with Pepitas and Nutritional Yeast
Snack time at work for me means I get to walk around for a few minutes away from the computer, and I get to eat, which always makes me happy. Often times my snack is just a handful of mixed nuts, but eating that day after day sometimes gets a bit monotonous. This delicious avocado snack came from my aunt, and I thank her every time I eat it because it is so simple yet flavorful. Before this snack, I had never heard of nutritional yeast, and from what I can tell, it is a big staple for protein in the vegan community, as well as it is high in B12. A B12 deficiency can lead to several health problems, and have symptoms similar to anemia. Adding nutritional yeast to veggies while eating mostly a plant based diet is very beneficial to your health. You can buy it at any health food store in the condiments aisle, or in those big bins and it is great on vegetables. The combo of the pepitas, avocado and the yeast is packed with protein and fiber, and will keep you full for hours.
1 whole avocado, pitted and sliced
1 teaspoon fresh lime juice
2 teaspoons nutritional yeast
1/2 tablespoon toasted pepitas, chili flavored
Slice the avocado and set on a plate. Squeeze the lime juice over the avocado, and top with the nutritional yeast and pepitas. Eat with a spoon and enjoy!
