Whole 30 Beef Chili

Chili is one of those meals that I love to eat over and over, especially during winter. Beef chili, turkey chili, potato chili - a good hot, spicy meal is perfect to get you through a cold evening and is easy to make Whole 30 compliant. This dish is great by itself, but you can add some toppings to it to change it up. Try topping it off with chopped red onion, jalapeno, crushed red pepper, green onion or fresh cilantro. I like to sneak in extra vegetables when ever I can, I so filled a bowl with fresh spinach and poured this chili over it. This chili was simple, and can alternatively be made in a slow cooker if you wanted to make it before you leave for work and have dinner ready when you get home - just brown the meat, add all the ingredients and slow cook for 6 hours on low.

1 pound ground beef

1 small onion, finely chopped

3 cloves of garlic

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon mustard powder

1/2 teaspoon salt

1 14oz can diced tomatoes

2 cups beef broth

Heat a dutch oven over medium high heat. Add the ground beef, cooking it until full browned, about 10 minutes. Once browned, remove the meat from the dutch oven, leaving the fat that rendered off in the pan. 

Add the onions, garlic, cumin, chili powder, paprika, mustard powder and salt to the hot dutch oven, cooking the onions and spices in the rendered beef fat. Reduce the heat to medium low. Cook until the onions are soft and translucent, about 4 minutes. 

Add the cooked beef, whole can of diced tomatoes and beef broth to the dutch oven. Turn the heat to high and bring to a boil.

Once it is boiling, turn the heat back down to low and simmer uncovered for 1 hour. Turn off the heat, serve and enjoy.
