Almond and Berry Cereal
Okay, I will be honest and say that calling this cereal is a bit of misnomer, but I really could not come up with anything creative to call this. I really wanted to get myself a treat for this Whole 30 but not bend from the rules. I already keep my fruit intake to a minimum, so this treat really hit that sweet spot fix I wanted it to. Fresh berries add natural sweetness without added sugar, and the slivered almonds satisfy that crunch you would get from eating a boxed cereal. I already have unsweetened, unflavored almond milk to go in my coffee, mainly because I like to control the amount of sugar in everything I consume, but if you have unsweetened vanilla flavored almond milk, that is fine as well, just skip adding the vanilla extract. Not doing whole 30? drizzle just a little bit of honey on top. This really is not a recipe since there is no cooking involved, but it was too good not to share with you all.
2 tablespoons slivered almonds
1 handful of raspberries
1 handful of blueberries
1/4 cup unsweetened, unflavored almond milk
drizzle of vanilla extract
In a bowl the berries, almonds and almond milk. Drizzle the vanilla extract on top, mix together with a spoon and enjoy!
