Guacamole is a cherished snack food; packed with protein and fiber, it is one of my go-to party foods. If you know me at all, you know that I LOVE Mexican food, and avocados are something I eat regularly since I live in the middle of avocado country. It has been a rainy weekend, so we pulled out the board games to pass the time. Midway through the game we started to feel peckish, so I made some smooth guacamole and paired it with the plantain chips from Trader Joes. Some people prefer chunky guacamole (like me) but it was two against one in favor of a smooth guacamole.
3 ripe avocados
1 Roma tomato
1 jalapeno, deseeded (keep the seeds if you want the heat)
2 cloves of garlic
juice from 1/2 a lime
1/2 small white onion (or 1 shallot)
1/4 teaspoon salt
1/4 teaspoon pepper
Cut the avocados in half and remove the pit. Now chop your tomatoes into quarters. Add both ingredients to a food processor. Cut the stem off the jalapeno pepper, slice in half longways and remove the rib meat and seeds.
Add all remaining ingredients to a food processor. Blend until you reach the desired smoothness and eat with some plantain chips! Enjoy!
