Proscuttio Wrapped Asparagus

I love eating prosciutto, but I do not eat it often. I happened to be at Trader Joes and saw they had some Whole 30 compliant prosciutto, so I picked up a pack to bring home. I already had some asparagus at home that I needed to eat, and know that the salty ham goes great with the bitter vegetable. A simple recipe that is easy to prepare, this side dish goes great with roasted chicken, baked salmon or with some pan roasted pork chops. If you have not done so yet, invest in some good baking sheets and parchment paper for baking this wonderful side dish. 

1 bunch of asparagus

4-5 slices of prosciutto

1/2 tablespoon olive oil

salt and pepper to taste

Preheat the oven to 350 degrees Fahrenheit. Trim the bottoms of the asparagus; in a large bowl toss the asparagus with the olive oil. 

Tear the prosciutto slices in half long ways with your hands, so that you get two strips of the meat from each slice. Grab 7-8 asparagus spears at a time and wrap one slice of prosciutto around the bunch. Repeat until all of the spears have been wrapped. 

Place onto the a baking sheet lined with parchment paper. Sprinkle salt and pepper over all of the wrapped spears. Place the baking sheet into the oven and bake for 20-25 minutes, until the prosciutto is crispy. 

Remove from the oven, allow to cool for a moment and enjoy!
