Lemon Turmeric Chicken
Getting the flu sucks, plain and simple. I fully intended to get this post up a week ago, but I woke up last week incredibly sick and unable to get out of bed, let alone work at a computer. After a couple of days my aunt recommended I get a sinus rinse to help alleviate the severe congestion. At first I was skeptical but I was willing to try just about anything to be able to feel a little bit better. Big thanks to my aunt for suggesting it, I felt a lot better quickly and was able to breathe. But enough about that - I made this meal and was not able to eat it every day for lunch at work, mainly because I did not go to work for most of the week. But I am happy to report I am on the mend and this meal is delicious. Notes of spice and tangy lemon blend together wonderfully; eat this by itself, over a bed of cauliflower rice or over chopped cabbage.
5 chicken breasts
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon turmeric
1 teaspoon cayenne pepper
2 tablespoons lemon juice
1 tablespoon olive oil
1 medium onion, diced
5 cloves of garlic, finely diced
2 tablespoons chopped parsley
3 large carrots, diced
One 14 ounce can fire roasted tomatoes
In a small bowl, mix together olive oil, lemon juice, parsley, cayenne, turmeric, cumin and paprika. Mix together well with a fork to make sure it is a smooth rub/ sauce. Rub over the chicken breasts and set aside.
Chop the carrots and onion; place in the bottom of the slow cooker. Add the garlic and whole can of fire roasted tomatoes, mixing together to have all the veggies blended well.
Place the chicken on top of the vegetables. Set the slow cooker to cook on low for 7 hours.
