Shredded Garlic Chipotle Chicken
Okay, I will be fully honest and admit that I took a shortcut to make this recipe. I used jarred salsa from Trader Joes to make this shredded chicken. The garlic chipotle salsa is Whole 30 compliant (a lot of jarred salsas often have added sugars, which is a big no-no for clean eating) and packed with spices. Knowing that all I need to do is throw in some frozen chicken breasts or thighs, top it off with the jar of salsa and walk away for 8 hours pertains to my busy lifestyle. This is great for taco meat, taco salads or just by itself with some vegetables. I used a combo of two chicken thighs and two chicken breasts so that I had some variety in the meat, but you can use which ever kind you want.
3-4 frozen chicken breasts or chicken thighs
One 16 oz jar of Trader Joes Garlic Chipotle Salsa
Get out your slow cooker and set it up on low for 8 hours.
Put the chicken into the slow cooker and pour the entire jar of salsa over it. Place the lid on the crock pot. After 8 hours, shred the chicken with two forks and enjoy!
MEG'S TIP: For the sake of saving my plastic tupperware, I store any food that has bright colors that could stain in glass tupperware. I highly recommend anything red or yellow (some of my curries that have turmeric in them will stain plastic tupperware) in glass containers. They are easy to clean and do not stain. I used my glass Pyrex tupperwares for storing this chicken in the fridge.
