Sweet Potato Toast - Breakfast Style

I love open faced breakfast sandwiches. Heck, I love breakfast in general - gooey egg yolk, sopped up with some good carbs, with some bacon and avocado. I have been wanting to try sweet potato toast for a while, so I grabbed a large, round sweet potato and decided to experiment.  I originally tried this with smaller sweet potatoes and it didn't work, so grab the thickest sweet potato you can find. I paired my toast with fried eggs, some bacon and avocado and it was a match made in breakfast heaven. In terms of appliances, you will need a toaster for this; you could use a toaster oven, but it was faster using the toaster to be quite honest. This is a Whole 30 meal, but if you would like to be vegan, jut top it with some of the avocado mash. 

1 large, round sweet potato

2 eggs

2 slices of bacon

1 avocado

1-2 teaspoons lime juice

salt and pepper to taste

Okay so this guy may have been sitting on my counter for a few weeks. It's little eyes are all purple. Whoops....but at least sweet potatoes (and most root vegetables) can last a lot longer, they are great for that reason.

Using a large knife, carefully slice the sweet potato to be about 1/4 inch thick. Slice until the whole potato is sliced. 

Place a couple of the slices into the toaster and set the heat onto high. Once it done, rotate the slices. Repeat this process for a total of 4 times. This ensures the slices are thoroughly cooked through. 

At this point your 'toast' is done. I fried up some bacon, a couple of eggs and mixed together my avocado mash. In a bowl, mix together your ripe avocado, lime juice, salt and pepper. Mash with a fork and spread onto the warm slices of sweet potato. Top with the fried eggs and bacon and enjoy.
