Garlic and Sriracha Glazed Salmon
September brings a lot of great things - cooler weather, fall colors and my birthday! My older sister is wonderful and got me a gift that truly keeps on giving: a membership to Costco. I will be honest and say the samples always pull me in, but I really love Costco for its deals on meats. I picked up a huge salmon filet over the weekend and will be eating off of it all week. Costco is a deal lovers dream because that $13 filet will feed me for about 6-7 meals, making this purchase very cost efficient to my tight budget. I decided to try a new recipe to change up my dinner routine and as a bonus get something new to add to my clean eating blog. While sriracha has some sugar in it, I like it as a hot sauce to add depth of flavor to any meal. Mixed with coconut aminos and fresh chopped garlic, this recipe took all of 15 minutes to make. If you wanted it non-paleo, you can use soy sauce in place of the coconut aminos. Paired with another new recipe of 'cheesy' garlic zucchini noodles, this meal was absolutely satisfying.
1 salmon filet
1 garlic clove, minced
1/2 tablespoon coconut aminos
1/2 tablespoon sriracha
salt and pepper to taste
In a small bowl, mix together the coconut aminos, sriracha and garlic together until blended. Cover pour 2/3 of the sauce over the salmon and allow to rest for about 5 minutes.
In a pan, heat a little olive oil over medium heat. Once hot, add the salmon skin side down. Cook for 5 minutes, or until you can see the color on the bottom getting lighter/ cooked through. Flip the salmon and allow to cook for another 5 minutes.
Remove from the heat and pair with your favorite veggies. Enjoy!
