Cheesy Paleo Zucchini Noodles

I love zucchni noodles, which comes as a surprise to no one. BUT I also like changing up my normal routine, so I took a leap of faith and tried out a new way to make my noodles. I like cheese, but cheese does not like me; I know that in vegan cooking nutritional yeast is the go-to substitute, and I always keep it around, so it was a no-brainer for me to try adding it to my side dish for my salmon dish the other night. This recipe took no more than 10 minutes between prep and cook time, so I recommend you give it a try! This recipe is a recipe for one, so if you wanted to make this for two, just double all of the measurements. 

1 zucchini, spiralized

1 clove of garlic, minced

2 teaspoons nutritional yeast

1/2 tablespoon butter or ghee

salt and pepper to taste

olive oil

red pepper flakes (optional)

Wash and clean your zucchini and turn into spirals (I love my spiralizer and use it at least once a week). Over medium heat, heat the olive oil and add the garlic. Cook for about 1 minute, then add the zucchini noodles. Salt and pepper to taste. Cook for 5-7 minutes, until tender.

Turn off the heat and add the nutritional yeast, stirring until evenly distributed on the noodles. Add the red pepper flakes if desired. Serve and enjoy!
